1 Medium apple, Fuji pared, cored and chopped
Directions:
Beat egg in medium bowl; stir in milk, apple, and oil. Stir in remaining ingredients (only half of the cinnamon) all at once just until flour is moistened (batter will be lumpy).

Fill muffin cups about 3/4 full. Use paper cups or lightly grease pans. Mix 1/4 cup packed brown sugar, nuts and remaining cinnamon and sprinkle over batter in each cup.

Bake at 400 degrees for 20 minutes.
