Cut potatoes lengthwise into 1/4-inch-thick planks.

In large bowl, toss potatoes with lemon juice, oil, oregano and salt.

Cover a sheet pan with aluminum foil; arrange potatoes on pan in one layer.

Bake in 425-degree oven 15 minutes. Turn potatoes over; bake 15 minutes more.
