Comments: If turkey is cooked alone, use the turkey pan to make the gravy.
Ingredients:
1.5 Cups mushrooms sliced
3 Tablespoons oil, olive
1 to taste salt and pepper
Directions:
In a large skillet, add 1 tablespoon olive oil.

Toss in turkey pieces and brown to create some fond. Add next tablespoon of oil to saute the mushrooms. Then add celery and onions, adding the last of the oil, if needed.

Sprinkle flour over the veggies and allow to get a little color. When flour is cooked through, deglaze with a cup of white wine.

Slowly pour in stock, stirring to incorporate flour and veggies. Add the both kinds of sage and simmer until desired consistency for gravy.
