Directions:
Combine the stocks and bring to a boil. Use a large ladle to skim fat from the top of stock. Let simmer.

In a large skillet, caramelize onions with the 1/4 cup butter and sugar. Add flour until a slight roux forms. Add wine and let sit for 5 minutes. Add the hot stock to the onions, mix well. Add salt and pepper to taste. Add more wine if necessary to give a sweeter taste.

For Croutons:
Cut circles of white bread and brush with butter. Bake until browned on both sides. Place a thin slice of Swiss cheese on top of each crouton. Then add a round slice of mozzarella and grated parmesan and place under the broiler to brown on top.
