-1 fl oz tabasco
1 Pinch pepper, black crushed
Directions:
Place egg yolks in blender with lemon juice and Tabasco. Turn blender on and off quickly. Turn blender on high speed and pour butter in a steady stream until mixture is complete emulsified.

Combine peppercorns, salt, vinegar, tarragon and shallots in a stainless steel saucepan. Reduce au sec. Remove from heat and add cold water. Strain reduction into bowl. Add to egg mixture.
