Directions:
Put the cut potatoes into a pot filled with water, then drain.

Add the cold water to the pot. Bring to a boil and simmer about 20 minutes, or until a fork or a knife pierces the potato chunks easily.

While the potatoes are cooking, put the milk, butter, salt and pepper into a saucepan. Heat the milk until the butter melts, but do not allow the mixture to boil. Keep the mixture warm until you are ready to add it to the potatoes.

When the potatoes are fully cooked, drain and place back on a low burner to remove all excess moisture. It is important to mash the potatoes while they are still hot, because cold potatoes will become rubbery and starchy.

Place the potatoes and garlic into a mixing bowl and whip, adding milk mixture, until mashed to the desired consistency. Taste for correct seasoning.
