0.25 Cup parsley, flat-leaf picked
Directions:
Separate the leaves of the radicchio, wash them and put to one side. Add a good pinch of salt to your chopped garlic and, using the side of your knife, squash it into a pulp. Put the mashed garlic into a serving bowl and add a couple of tablespoons of balsamic vinegar. Pour twice as much olive oil over the top and season with salt and pepper. Add the chopped rosemary.

Preheat a griddle pan and grill the radicchio leaves a few at a time for 10 seconds, just until they wilt and start to char. Immediately drop them into the dressing and stir them around to coat them with the lovely flavors. Tear the parsley over it and eat.
