Ingredients: 1 to taste salt and pepper 1 Tablespoon curry powder, sweet 2 Tablespoons parsley, flat-leaf finely chopped

Directions:
In a large bowl, toss pork with limejuice, salt and pepper. Let sit for 30 minutes at room temperature.
Drain pork and pat dry. Brown pork in 2 tablespoons of oil.
Add 2 tablespoons oil to casserole with onions, garlic and ginger cook over low heat until soft, about 8 minutes. Stir in curry powder and brown sugar, 1 minute. Add chives, thyme, and habanero and cook just until fragrant, about 2 minutes.
Return pork and juices to casserole. Stir to coat with seasonings. Add water and bring to simmer. Cover and cook over low heat for 15 minutes. Add potatoes and carrots, season & cook until veggies are tender, about 1 hour.
Serve over rice. |
