Directions:
Place tuna steak in dressing and marinate for 30 minutes to an hour.
Prepare grill. Heat charcoal until covered with a layer of ash. Build a single-layer fire by spreading the coals evenly over the bottom of the grill. Set the cooking grate in place, cover the grill and let the grate heat up for 5 minutes. Use a grill brush the scrape the grate clean. You should be able to hold your hand over the coals for only 3 to 4 seconds.
Lightly dip a small wad of paper in oil; holding the wad with long tongs, wipe the grate.
Grill the tuna, uncovered, and turning once with a metal spatula, to the desired doneness, 4 to 5 minutes for rare or 6 to 7 minutes for medium rare. |
