Comments: Use colored sugars based on the occassion - multi-colored for birthdays and Easter, green for St. Patrick's Day, red for Valentine's day, blue for Hanukkah or a mix of red and green for Christmas. You can also decorate the tops with Royal Icing or a fudge frosting for an added flair.

Do not preheat oven yet - dough must chill before baking.

Melt butter. Add 1 cup sugar and all of the powdered sugar and mix. Let cool to room temperature and mix in the eggs, one at a time. Then add the vanilla, lemon zest (if using), baking soda, cream of tartar and salt. Mix well. Add flour in increments, mixing after each addition.

Chill dough for at least 1 hour (0vernight is better.)

When you are ready to bake, preheat the oven to 325 degrees and place the rack in the middle of the oven.

Use hands to roll dough into walnut-sized balls (you can use a disher to measure). Roll balls in a bowl of white sugar (if using colored sugars, mix white sugar 2:1 with the colored sugar you choose). Place on a greased cookie sheet, 12 to a standard sheet. Flatten dough balls with a greased spatula.

Bake at 325 degrees for 10 to 15 minutes (they should have a tinge of gold on the tops). Cool on the cookie sheet for 2 minutes, then remove to a wire rack to finish cooling.

If decorating with icing, pipe from a pastry bag after the cookies are cooled.
