1 Cup olives, Kalamata pitted
1 Medium onion, red halved and sliced
0.5 Large cucumber, English cut in thick slices, quartered
4 Tablespoons vinegar, red wine

Optional Ingredients:
4 6-ozs chicken breast, boneless, skinless Add to shopping list

Directions:
Whisk together the oil, vinegar and seasoning. Set aside.

Marinate chicken breast or shrimp in some of the salad dressing and grill. Top the salad with the sliced chicken or whole shrimp.
