Ingredients:
2 5-ozs chicken breast, boneless, skinless
2 Teaspoons butter, clarified
Directions:
Preheat oven to 350 degrees.

Season the chicken evenly on both sides with salt and pepper. In a large oven-safe skillet, melt the butter over medium-high heat, swirling to coat the bottom of the pan. Once hot, place the chicken, rounded side down in the pan and sear for 3 to 4 minutes. Once the pan pulls off the pan easily, use tongs to turn the chicken over. Place the pan in the oven to finish cooking.

Bake for 10 to 15 minutes, depending on the thickness of the chicken, until the internal temperature reaches 160 degrees. Let the chicken rest for 5 minutes before serving.
