6 Small tortilla, flour, 6 inch
Directions:
Heat a skillet over medium high heat.

Wash and dry lettuce, tomatoes, jalapeno and green onions.

Coat bottom of a stainless steel or cast iron skillet with oil. Add beef, and breaking apart with a spoon, cook until beef is browned and crumbly, about 3 to 4 minutes. Add chili powder, cumin, 1/8 tsp salt and pepper. Stir to combine with the beef. Remove from heat.

Slice the lettuce crosswise into thin strips. Small dice the tomatoes. Seed and mince the jalapeno. Trim and discard root ends and chop the green onions.

In a small bowl, prepare the salsa by mixing together tomatoes, jalapeno, onions, lime juice, 1/8 tsp salt and a pinch pepper.

To serve, fill tortillas with lettuce, beef and salsa. Sprinkle cheddar over the top.
