Directions:
1. In a small saucepan, combine soy sauce, sugar and oil. Cook over low heat, stirring, just until sugar dissolves. Remove pan from heat and cool.
2. In a small skillet, toast sesame seeds over medium heat, shaking pan, until they brown slightly and start to pop. Remove pan from heat. If you wish to crush sesame seeds, place them between 2 pieces of wax paper and push a rolling pin over them. Stir seeds into cooled sauce.
3. Wash spinach to remove grit. Dry in a salad spinner. Discard stems and any wilted leaves. Wrap in paper towels and refrigerate until ready to assemble salad.
4. Transfer spinach to salad bowl. Stir sauce to recombine and pour over spinach. Add marinated orange slices, if using, see related recipe. Toss until well coated.
