5 fl ozs milk, evaporated scalded
3 Cups milk, whole scalded
6 Each crackers, saltines
Directions:
Cut salt pork in small pieces and fry in a large kettle; remove cracklings to paper towels to drain. Sauté onions in pork drippings, add potatoes and boiling water, and boil about 5 minutes. Add fish and bring to a boil and simmer about 15 minutes. Add both milks and seasonings and heat thoroughly. Add crackers and butter.

Sprinkle cracklings over the chowder and serve immediately.
