Ingredients:
4 6-ozs chicken breast, boneless, skinless
1 to taste salt and pepper
10 Teaspoons Béarnaise Sauce Mix (one envelope)
1 Cup milk, whole
Directions:
One at a time, place breast halves between two sheets of plastic wrap and pound flat with flat side of mallet.

Lay one piece of ham over each breast, then one piece of cheese. Place a strip of bacon crosswise. Begin rolling the chicken. Continue rolling, tucking in ends of ham and cheese and secure with toothpicks.

In bowl 1 (or paper plate): Add flour and season with salt and pepper
In bowl 2: Beat egg lightly with 1 teaspoon water
In bowl 3 (or paper plate): Breadcrumbs

One by one, roll each piece in flour to coat, then dip in egg, coating completely; roll in bread crumbs, pressing crumbs into egg coating. Place chicken pieces on a tray and refrigerate for one hour.

Heat peanut oil and butter in a frying pan to 350 degrees (medium heat). Fry chicken pieces until browned evenly and firm to the touch, turning a ΒΌ turn as each side browns. Drain.

Make sauce mix according to package directions (1 cup milk and 1/4 cupr butter) and spoon over chicken after placing in package.

HEATING INSTRUCTIONS: Thaw completely overnight in refrigerator. Vent container and heat on Medium-High in microwave for 2 to 3 minutes until hot. It will take a little longer due to density of the rolled up chicken for it to heat all the way through.
