Sherry Mushroom Sauce

1 to taste salt and pepper 2 Tablespoons oil, olive |
Directions:
Sauté mushroomsin oil; drain oil. Add chicken stock and sherry. Cook 10 minutes.
Add crème fraîche. Cook 5 minutes. Strain. Add salt and pepper to taste. Mount with whole butter before service. |
