Comments: This makes 5, 9-inch cheesecakes. Dufour and Philadelphia Cream Cheese are preferred because they are firmer and contain less water.

Line 5 pans with parchment paper and collars.

Cream cheese and sugar very well. Scrape sides and between the paddle blades to ensure the mixture is blended.
