Comments: If you need to soften the butter quickly, put the 2 tablespoon block of butter in the bowl, cut the butter in half, and microwave it for 8 seconds. Don't let the butter melt! Chop your parsley while it softens.
Ingredients:
0.13 Teaspoon garlic powder
4 7-ozs chicken breast, boneless, skinless
Directions:
In a small bowl, mash together the softened butter, parsley, tarragon, garlic powder, and pepper with a teaspoon so that everything is well mixed. Form the butter into a rectangular shape in the bottom of the bowl. You're going to make small sticks out of later it. Place the bowl in the freezer.

Place the chicken breast halves flatly on a sheet of wax paper. Place another sheet of wax paper, the same size as before, over the chicken. With a rolling pin, flatten the chicken until it's about 1/4 to 1/2 in. thick. Remove the top layer of wax paper and throw it away. Lift each piece of chicken off of the bottom layer of wax paper and put it back down.

In a small bowl, whisk the egg and skim milk together. In another bowl, mix the seasoned crumbs, parmesan cheese, and paprika. Remove the herbed butter from the freezer and slice it lengthwise into four sticks.

Scoop out a stick of the herbed butter and place it lengthwise in the center of a chicken breast half. Do this with the other three pieces of herbed butter and chicken. Starting at an end where the width of the chicken breast is smallest, roll up the herbed butter in the chicken breast, then replace it on the wax paper with the seam side down. Do this with the other three breasts.

Preheat the oven to 400 degrees. Spray a baking sheet with cooking oil spray.

Place one rolled up chicken breast in the egg mixture and coat it thoroughly. Handle it gently so the seam doesn't open. Place the egg-coated chicken breast in the crumb mixture and coat it thoroughly. Handle it gently so the seam doesn't open. Place the crumb-coated chicken breast on the baking sheet with the seam side down.

Repeat steps for each chicken breast. Then re-coat each chicken breast with the egg and crumb mixtures. Bake the chicken uncovered for 25 minutes.
