Directions:
Preheat oven to 375 degrees. Cut the tops off the garlic and remove excess peel from outside. Place heads in garlic roaster and drizzle olive oil over tops of heads. Place top on baker and place in oven. Roast about 1 hour, until garlic pulp is soft. Squeeze out pulp into bowl and lightly mash. Set aside. Cut potatoes into medium cubes and place in a medium saucepan and cover with cold water.

Over medium heat, bring quickly to a boil and reduce to a simmer. Simmer until potatoes are very soft, about 20 minutes. Drain and place in a large mixer bowl. Add garlic, butter, cream, salt, and pepper. Mash until smooth. Do not overbeat.
