Directions:
In a medium saucepan, bring 1 1/2 cups water to a boil; add the couscous, oil and salt. Remove from the heat; let stand until water is absorbed - about 5 minutes. Fluff with a fork.
In a large bowl, combine the remaining ingredients. Add the couscous; toss to combine. Refrigerate, covered, until chilled, at least 3 hours.
