Trim any excess fat from the chicken and cut the meat into 1 1/2-inch pieces. Toss the chicken with 1 tablespoon of the soy sauce and the garlic and marinate for 10 minutes while you prepare the dipping sauce.

Combine the reamining 2 tablespoons of soy sauce with the sesame oil, lemon juice, green onions and peanuts. Set the sauce aside in a small serving bowl.

Thread the chicken pieces on the skewers. Heat the vegetable oil in a large non-stick skillet. Add the chicken and cook (in batches, if necessary) until nicely browned on both sides, about 5 minutes total.

Place the skewered chicken on a platter and pass with the dipping sauce. Serve hot.
