If you don't like casseroles, don't mix noodles in with beef mixture. Instead, simmer beef mixture for 30 minutes and top over cooked noodles.

Directions:
Brown ground beef. Pour off excess grease and set beef off to the side. Sauté green pepper and onions in a small amount of olive oil, until softened, set aside with beef. Add mushrooms and sauté until liquid cooked off. Add beef and veggies back to pan; add soup.
Simmer for 5 minutes and then stir in cheese and mix together well. Simmer for 15 to 20 minutes. Mix in noodles and pour into casserole; top with more cheese as desired. Bake at 350 degrees until cheese bubbles. Serve. |
