Place olive oil in roast pan over medium high heat. When hot, add meat and sear on both sides. Turn the stove off. Add sliced onions, mushrooms, tomato sauce, wine, water, and pepper, until meat is at least half covered. Cover and bake at 325 degrees for about 4 hours. Check frequently to make sure there is enough liquid, adding water and/or wine as required. Serve with noodles.
