Directions:
Preheat oven to 350 degrees.
Defrost spinach and drain. Boil water for noodles and follow package directions for cooking. In a medium bowl, combine spinach, cottage cheese, and spices. Stuff mixture into noodles. Place stuffed noodles side by side in a baking dish. Cover with sauce and cheese. Bake uncovered for 20 minutes.
Chef?s note : You can substitute prepared spaghetti sauce. And for an added touch: Brown ¼ lb - 1/3 lb ground beef or ground turkey with 1 small onion, diced. Add to spinach mixture before stuffing.

Directions:
In a medium saucepan or skillet, heat the oil.
Add the onions and garlic and sauté over medium-low heat for 6 to 8 minutes until soft. Add the tomatoes, tomato paste, basil, oregano, sugar, salt, and pepper.
Reduce heat to low and simmer, partially covered for 20 to 40 minutes. Stir occasionally. |
