Comments: Adapted by Lindy H Frank. For cashew brittle: Omit peanuts and add 1, 7oz jar of dry roasted cashews. This was always Granny's favorite gift from me. I swear she could eat a whole pound of my cashew brittle in one sitting. Yields 1 pound.
Ingredients:
1 Cup peanuts, roasted

Directions:
In a 1 1/2-quart casserole, stir together sugar and syrup. Microwave at High for 4 minutes. Meanwhile, lightly grease a cookie sheet. Stir peanuts into mixture.

Microwave at High for 3 to 5 minutes, until light brown. Add butter and vanilla to mixture, blending well. Microwave at High 1 to 2 minutes more.

Peanuts will be lightly browned and syrup very hot. Add baking soda and gently stir until light and foamy. Pour mixture onto cookie sheet. Let cool 30 minutes to 1 hour.

When cool, break into small pieces and store in an airtight container.
