Grate or chop the cheese as finely as possible, toss with the flour and set aside. Rub inside of fondue pot or earthenware casserole with the clove of garlic, then the butter. Place the pot over medium heat, add the champagne and heat until just boiling. Add the floured cheese a handful at a time, stirring with a wooden spoon after each addition.

When the cheese is melted and creamy, add the white pepper, cayenne, nutmeg, lemon zest and olives. When the fondue comes to a boil, stir in the vodka. Cut the French bread into small cubes, each with a bit of crust attached.
