Directions:
1. In a small bowl, thoroughly blend cream cheese and sour cream.
2. Lay salmon slices on flat surface and with rubber spatula, spread each with cheese mixture. Spoon red caviar down center of each and roll up slices. Repeat process with sable and golden caviar.
3. Arrange salmon and sable rolls on platter lined with lettuce and garnish with cucumber slices, if desired. Sprinkle remaining red and golden caviars over rolls. Cover loosely until ready to serve.
